SUPER SIMPLE VEGAN CREPE RECIPE

So did you know it’s totally possible to make pancakes without eggs? I’m not even sure why they were added in the first place but from what I’ve read it was to use up eggs before lent. Then all you need to do is switch the milk to a dairy free option and you have a vegan pancake recipe! They taste amazing too, you wouldn’t even know the difference!

There are absolutely loads of American style vegan pancake recipes out there and although I do like that type, for me it’s all about the crepe.

Crepes were always my favourite type of pancake and I used to make them for lunch all the time before going vegan because Tiger (my youngest) loved them and he still loves them, he is very fussy but even he didn’t notice the difference.

It was pancake day in the UK last week so we ate these then, we just had them with sugar and lemon because that is our favourite topping. I do also love jam with oat cream but we didn’t have any so I just stuck with lemon and sugar because you just can’t go wrong with that!

I am planning to make savoury ones soon though and fill them with a creamy mushroom filling.

If you are cooking them but not planning to eat them straight away then you can just put them on a plate with a piece of baking paper in-between to stop them sticking together then reheat them when you want to eat them. Or you can keep them warm in the over on a low heat so you can all sit down and eat together, I had two frying pans on the go and was trying to keep the kids plates topped up and eat a couple myself at the same time!!

SUPER SIMPLE VEGAN CREPES

Makes around 8 - 10 crepes

Ingredients

  • 2 cups White Spelt Flour Plain flour is fine
  • 3 tbsp Sugar
  • 1 tsp Baking Powder
  • 3 cups Dairy Free Milk I used Oatly Barista
  • Oil (for frying) I used Coconut Oil Fry Light
  • TOPPINGS OF YOUR CHOICE!

Instructions

  1. Add the dry ingredients (flour, sugar and baking powder) to a large bowl and slowly whisk in the dairy free milk.

  2. Heat up a frying pan on a high heat, spray in some Fry Light to cover the pan or add some oil / dairy free butter. This is to stop the crepes from sticking.

  3. Add a ladle of pancake mixture to the frying pan and leave for around 30 secs to 1 min then flip over and leave for the same. When cooked turn onto a plate and top with the toppings of your choice!
