CARROT, GINGER & ORANGE SOUP

Ingredients

  • 1 Onion Finely chopped
  • 2 cloves Garlic Finely chopped
  • 3 tbsp Oil
  • 1.5 inch Piece of Ginger Grated
  • 1 bag Carrots About 750g - Sliced
  • 4 Oranges Juiced
  • 3/4 cup Red Lentils
  • 1.5 tbsp Stock Powder
  • 1000 ml Boiling Water

For the Croutons

  • 1/2 Baguette Slighty stale
  • 4 tbsp Oil
  • 1 tsp Rosemary Optional

Instructions

For The Soup

  1. Heat the oil then add the onion and fry until softened. Add the garlic and ginger, stir.

  2. Add the sliced carrot, red lentils and stock powder then stir.
  3. Add the boiling water then simmer on a low heat for about 45-mins to an hour. Check the carrot is completely soft.

  4. Blend the soup then squeeze the juice of the oranges in and stir. If you the soup is too thick then you can add a little extra water.

For The Croutons

  1. Tear the bread up into small pieces then mix into the oil and rosemary. You can then either fry or grill them until crispy.
